This recipe calls for coconut sugar which is a better alternative to regular sugar. Coconut sugar is lower on the glycemic index than regular sugar. What does that mean? If something is lower on the glycemic index it will not spike your blood sugar levels like higher GI foods will. Coconut sugar is a much better alternative when cooking something sweet!
Ingredients:
Cherry Filling:
4 cups of pitted cherries
2 tablespoons of oat flour
1/4 cup orange juice
Crisp Topping:
1 1/2 cup rolled oats
1/2 cup oat flour
1/2 cup coconut sugar
1 teaspoon
1/8 teaspoon
1/2 cup unsalted butter
Preheat over to 375.
In a medium sized bowl, mix cherries, oat flour & orange juice – pour into the casserole dish & set aside.
In a separate bowl, mix together all of the crumble ingredients. Use a fork to cut the butter into the dry ingredients until it forms little crumbles. Evenly spread topping over the cherries in the casserole dish.
Place in the oven and bake at 375 for 30 minutes or until topping stats to brown.
Serve and enjoy!
