Buddha Bowl

Our favorite healthy snack is the Buddha Bowl. Why is it called a Buddha bowl you may ask?  According to a story told by the man who wrote “Buddha Diet” , the name Buddha Bowl has a very literal origin. Buddha woke up before dawn every morning and carried his bowl through the roads where he was staying. Local people would place food in the bowl as a donation, and at the end he would eat whatever he had been given – That was the original Buddha Bowl: a big bowl of whatever food villagers had available and could afford to share.  Usually this bowl contains rice or whole grains, roasted veggies, a dressing and protein. They are also known as power bowls, micro bowls or grain bowls.  They are filling, nutritious and beautiful to prepare.

Whole grains are packed with nutrients including protein, fiber, B vitamins and antioxidants. A diet rich in whole grains has been shown to reduce the risk of heart disease, type 2 diabetes, obesity, and some forms of cancer.  We used brown rice as the base for this bowl.  Its so filling so you finish the meal feeling full and satiated.  Kale, Cabbage and Beets may sound boring and like foods most run from but when cooked properly, they can taste so delicious!  This meal truly creates a dance for your taste buds.

Ingredients:

-Brown Rice

-Cabbage

-Kale

-Beets

-Avocado

-Pumpkin Seeds

-Tahini Dressing

Directions:

Roast Beets in oven for 20 minutes in olive oil

Sauté Cabbage, Kale and grated beets on skillet for 15 minutes until roasted

Fill the bottom of the bowl with brown rice – neatly place cabbage, kale and grated beet mixture in one pile, roasted beets right next door, Sliced Avocado on top and pumpkin seeds as the topping.  Tahini is a perfect dressing to drizzle on top.  This is a perfect mid day lunch when you’re working from home or on a beautiful Saturday afternoon.
