CBD Honey Roasted Carrots & Cauliflower Mash: Thanksgiving Edition

Today is a recipe packed blog post! Thanksgiving is right around the corner and ATLRx is here to provide an relaxing and drama-free Thanksgiving!

We are cooking very nutritious honey roasted carrots and a cauliflower mash today! Carrots are a great source of beta carotene, fiber, potassium, and antioxidants. They are also known to lower cholesterol and improve eye health. Cauliflower is incredibly high in vitamin C, B-complex, and calcium. Cauliflower is an all-around superfood! It contains powerful anti-cancer compounds such as indole-3-carbinol and sulforaphane, both of which are beneficial in preventing breast, cervical, ovarian, stomach, and prostate cancers. Isn’t it nice to know you’ll at least have 2 Thanksgiving sides that are nutrient dense?

 

Honey Roasted Carrots:
-2 bundles of carrots
-2 tbs coconut oil
-1 tsp garlic powder
-1 tsp salt
-2 tbs ATL Rx honey

Instructions:
Preheat oven to 425 degrees F. Coat baking sheet with coconut oil.
In a small bowl, mix together coconut oil, garlic powder, salt, and carrots – make sure carrots are evenly coated.
Put carrots on baking sheet. Spread evenly and bake for 15 minutes.
Stir and roast for an additional 10 minutes, browning the carrots
Remove the carrots from the over and drizzle ATLRx honey overtop of the carrots. Bring temperature down to 300 degrees F. ** NOTE: If you are baking with CBD, you do NOT want to bake over 320 degrees Fahrenheit, as anything above 320 degrees will cause the CBD to evaporate and the terpenes to be destroyed. (If you don’t already know, terpenes play a crucial role in providing therapeutic benefits.)**
Place carrots back in the oven and roast for an additional 10-15 minutes until carrots are browned!

CBD Honey Roasted Carrots & Cauliflower Mash

Cauliflower Mash:
-1 head cauliflower
-2 tbs coconut oil
-1/4 tsp salt
-2 cups of unsweetened almond milk
-ATLRx CBD infused butter (recipe below)

Instructions:
Chop cauliflower into small pieces and put them into a food processor to be broken into smaller pieces.
Place coconut oil in skillet on medium high heat and once hot, add in cauliflower. Cook for 6-7 minutes until the cauliflower goldens.
Add in almond milk and cook cauliflower for another 10 minutes or until there is no liquid at the bottom of the pan, as it should all be absorbed.
Transfer to a food processor and puree until completely smooth.
Melt CBD infused butter in microwave, pour on top of Cauliflower Mash, stir and serve!

Thanksgiving Edition

Well the good news is… you can’t OD on CBD, so LIGHT ‘EM UP!

Throw some CBD in the butter and give him seconds!

Cannabinoids bind well with fat, so when cooking with CBD it is best to mix with coconut oil or butter. Below is a recipe for homemade CBD infused butter, which we used in our cauliflower mash above. (As a reminder, you want to make sure you are not baking over 320 degrees.)

Homemade ATLRx infused butter:
-2 cups butter
-1 cup water
-20ML CBD oil

Instructions:
-Cut butter into small pieces and put into small pot with water and CBD.
-Cook on low for 2 hours, stirring every 30 minutes.
-Cool and pour into airtight container, then refrigerate.
